Apple Cobbler

From Weight Watchers

Prep: 30 minutes

Bake: 45 minutes

Serves: 12

Make ahead: one day

8 Granny Smith and/or Macintosh apples, peeled and thinly sliced

1 cup sugar

Juice of a half lemon

2 tsp. cinnamon

1/4 tsp. ground nutmeg

1 Tbsp. unsalted butter

1/2 cup all-purpose flour

1/2 cup whole wheat flour

2 tsp. baking powder

Pinch salt

1 cup fat-free milk

orange Sugar, for garnish (optional)

1. Preheat oven to 350 F.

2. Combine apples, 1/4 c sugar, lemon juice, cinnamon and nutmeg in large bowl; toss to coat. let stand 20 minutes.

3. Put butter in 9-by-13-inch baking dish. Put dish in oven; melt butter.

4. Combine remaining 3/4 cup sugar, all-purpose flour, whole wheat flour, baking powder and salt in medium bowl. Whisk in milk. Remove baking dish from oven; add batter. Top with apple mixture, gently pressing top with spatula to submerge some apples into batter. Bake 20 minutes. Rotate baking dish and bake until top is golden brown, 25 to 30 minutes. If making ahead, let cobbler cool completely on rack. Cover and chill up to one day. Reheat at 300 F until warm, 25 to 30 minutes. Sprinkle with orange sugar (if using).
